For those days when you’re craving a cozy, creamy, comforting bowl of soup – this is the perfect recipe for you. It’s a bit of heaven from my husband’s childhood, served with my mother-in-law’s Fluffy Southern Buttermilk Biscuits.
This soup is loaded up with lots of bacon and ham – and lightened up a bit by using milk instead of heavy cream. The result? Basically the most delicious, sweet-and-savory, thick-and-creamy, comforting soup you could ask for.
Bacon Corn Chowder

Ingredients
8 slices bacon
1 medium onion, chopped
8 cups potatoes, peeled and cubed
2 cups water
2 cans cream of chicken soup*
2 cups milk
1 cup sour cream
1 tsp salt
fresh ground pepper
2 Tbsp fresh chopped parsley or 2 tsp dried
2 cups frozen corn
1 1/2 cups cubed ham
Directions
- Fry the bacon in a large stockpot. Remove cooked bacon and pour off all but 2 Tbsp fat.
- Add the onions to the pot and saute until translucent.
- Add the potatoes and water. Cook until tender, but don’t let the potatoes get mushy; about 15 minutes.
- In a medium-size mixing bowl, mix the cream of chicken soup, milk, sour cream, salt, pepper, and parsley. Add corn and ham.
- Add the chicken soup mixture to the pot, crumble the bacon and add that as well. Simmer until warm, stirring occasionally – about 5-10 minutes. Season with additional salt and pepper to taste.
- Serve warm or refrigerate for up to 4 days.
Notes
- We prefer Yukon Gold potatoes for this recipe but you can also use Russets – just be careful not to overcook.
- Warm up the soup faster by defrosting the frozen corn with water in the microwave before adding it to the stockpot. We love Costco’s frozen White Sweet Corn.
- Prepackaged cubed ham makes the recipe prep go faster as well.
