Bacon Corn Chowder

For those days when you’re craving a cozy, creamy, comforting bowl of soup – this is the perfect recipe for you. It’s a bit of heaven from my husband’s childhood, served with my mother-in-law’s Fluffy Southern Buttermilk Biscuits.

This soup is loaded up with lots of bacon and ham – and lightened up a bit by using milk instead of heavy cream.  The result? Basically the most delicious, sweet-and-savory, thick-and-creamy, comforting soup you could ask for.

This Bacon Corn Chowder is wonderfully creamy and comforting.  Serve with warm Buttermilk Biscuits.

Ingredients

  • 8 slices bacon

  • 1 medium onion, chopped

  • 8 cups potatoes, peeled and cubed

  • 2 cups water

  • 2 cans cream of chicken soup*

  • 2 cups milk

  • 1 cup sour cream

  • 1 tsp salt

  • fresh ground pepper

  • 2 Tbsp fresh chopped parsley or 2 tsp dried

  • 2 cups frozen corn

  • 1 1/2 cups cubed ham

Directions

  • Fry the bacon in a large stockpot. Remove cooked bacon and pour off all but 2 Tbsp fat.
  • Add the onions to the pot and saute until translucent.
  • Add the potatoes and water. Cook until tender, but don’t let the potatoes get mushy; about 15 minutes.
  • In a medium-size mixing bowl, mix the cream of chicken soup, milk, sour cream, salt, pepper, and parsley. Add corn and ham.
  • Add the chicken soup mixture to the pot, crumble the bacon and add that as well. Simmer until warm, stirring occasionally – about 5-10 minutes. Season with additional salt and pepper to taste.
  • Serve warm or refrigerate for up to 4 days.

Notes

  • We prefer Yukon Gold potatoes for this recipe but you can also use Russets – just be careful not to overcook.
  • Warm up the soup faster by defrosting the frozen corn with water in the microwave before adding it to the stockpot. We love Costco’s frozen White Sweet Corn.
  • Prepackaged cubed ham makes the recipe prep go faster as well.
