Chicken Caccciatore is simple Italian comfort food at its best. This slow-cooker version makes a good Sunday dinner, since it’s so easy to prepare. It’s a family favorite of ours and frequently requested by my pickiest eater. I love that it’s loaded with lots of veggies, even if my kids can’t tell.
I usually serve it with egg noodles – but really, any kind of pasta will do, or serve it over rice for a gluten-free dinner. Add a big green salad and crusty bread to soak up all the sauce, and you’ll have a wonderful, home-cooked Italian meal.

1 large onion, thinly sliced
3-4 lbs bone-in chicken (breasts, thighs or a whole chicken, cut up)
1 can (28 ounces) diced tomatoes, with juice
2 6-oz cans tomato paste
1/2 pound sliced fresh mushrooms
1 green bell pepper, seeded and finely chopped
2 celery ribs, sliced
3 cloves garlic, minced
2 tsp dried oregano
2 tsp fresh basil OR 1 tsp dried basil
1 Tbsp paprika
1/2 tsp celery powder
2 Tbsp brown sugar
1 tsp salt
1/2 cup white wine OR chicken broth
3 Tbsp olive oil
1 tsp red pepper flakes (optional)
grated Parmesan cheese
Directions
- Layer the onion over the bottom of a 4-6-quart slow cooker. Add the chicken pieces to the cooker.
- Combine the next 14 ingredients and red pepper flakes, if using. Pour mixture over the chicken in the cooker.
- Cover and cook on high 3-4 hours or on low 7-9 hours.
- Serve over pasta or rice. Sprinkle with Parmesan cheese before serving warm.
