Ingredients

  • Brie topping:
  • 2 Tbsp butter

  • 1 medium onion, halved and sliced thin

  • 1/2 cup dried fruit (cherries, cranberries or chopped apricots)

  • 1 Tbsp brown sugar, packed

  • 1 Tbsp white balsamic vinegar

  • In the oven:
  • 1 round (15 oz.) brie cheese

  • Oil

  • Finishing:
  • 1/4 cup chopped nuts such as pistachios, cashews or sliced almonds.

  • crackers or sliced baguettes

Directions

  • Brie Topping:
  • Melt the butter in a skillet over medium heat. Add the sliced onion and cook for about 10 minutes, stirring frequently.
  • Once the onion has cooked, add the dried fruit, brown sugar, and vinegar. Cook about 4 minutes longer stirring frequently until caramelized.
  • In the oven:
  • Heat the oven to 350° F and line a baking pan or ovenproof plate with vegetable oil.
  • Put the unwrapped Brie in the center of the dish and bake uncovered, 8-10 minutes, until cheese is soft and partially melted.
  • Finishing:
  • Spoon the caramelized onion topping over the warm, melted cheese; sprinkle with nuts.
  • Serve with crackers or sliced baguettes.

Notes

  • If you’ve never baked or eaten brie, you might be a little confused by the dense, white outer layer. This is the rind and it’s totally edible. It adds great texture and flavor to the cheese – so go ahead and bake it as is.
