Baked Brie with Caramelized Onions & Fruit

- Brie topping:
2 Tbsp butter
1 medium onion, halved and sliced thin
1/2 cup dried fruit (cherries, cranberries or chopped apricots)
1 Tbsp brown sugar, packed
1 Tbsp white balsamic vinegar
- In the oven:
1 round (15 oz.) brie cheese
Oil
- Finishing:
1/4 cup chopped nuts such as pistachios, cashews or sliced almonds.

Directions
- Brie Topping:
- Melt the butter in a skillet over medium heat. Add the sliced onion and cook for about 10 minutes, stirring frequently.
- Once the onion has cooked, add the dried fruit, brown sugar, and vinegar. Cook about 4 minutes longer stirring frequently until caramelized.
- In the oven:
- Heat the oven to 350° F and line a baking pan or ovenproof plate with vegetable oil.
- Put the unwrapped Brie in the center of the dish and bake uncovered, 8-10 minutes, until cheese is soft and partially melted.
- Finishing:
- Spoon the caramelized onion topping over the warm, melted cheese; sprinkle with nuts.
- Serve with crackers or sliced baguettes.
Notes
- If you’ve never baked or eaten brie, you might be a little confused by the dense, white outer layer. This is the rind and it’s totally edible. It adds great texture and flavor to the cheese – so go ahead and bake it as is.
